The 'I dont' versus 'I can't' seems to make a distinction between identity and circumstance. One is lasting, the other is fleeting. Saying I don't wards off persistent queries like among friends who want you to have that extra drink or dessert, for example.
Often we say yes to a request for coffee two weeks later but will say no to one tomorrow. I heard Emily Balcetis from NYU describe is as the choice between feasibility (when tomorrow) and desirability (when in the distant future). I would love to know your take on how a persepctive of time affects yes/no decision.
